Whether marinated for the BBQ or seasoned simply for a classic roast, it’s a versatile and delicious centerpiece for any meal.
Cooking Instructions:
🔥 BBQ/Grill (For a Smoky, Charred Finish)
Preheat BBQ to medium-high heat.
Rub lamb with olive oil, garlic, rosemary, and lemon juice.
Cook for 6-8 minutes per side, flipping once, until internal temp reaches:
52-54°C (126-130°F) for medium-rare
58-60°C (136-140°F) for medium
Rest for 10 minutes before slicing.
🔥 Oven-Roasted (For a Tender, Juicy Finish)
Preheat oven to 200°C (390°F).
Place lamb in a roasting tray, fat-side up, and season with salt, pepper, and fresh herbs.
Roast for 40-50 minutes, depending on preferred doneness.
Rest for 10-15 minutes before slicing.
🔥 Slow-Cooked (For Fall-Apart Tenderness)
Marinate lamb overnight in red wine, garlic, and rosemary.
Place in a slow cooker with 1 cup of broth or wine.
Cook on low for 6-8 hours until fork-tender.
