Cooking Instructions:

🔥 Reverse Sear (For Precision Cooking & Maximum Tenderness)

  1. Preheat oven or smoker to 110°C (230°F).
  2. Season generously with salt and cracked black pepper.
  3. Place on a rack over a tray and roast for 30-40 minutes until internal temp reaches:
    • 48-50°C (118-122°F) for rare
    • 52-54°C (126-130°F) for medium-rare
  4. Heat a cast-iron pan or BBQ to high heat.
  5. Sear for 1-2 minutes per side until a rich crust forms.
  6. Rest for 5-10 minutes before slicing.

🔥 BBQ/Grill (For a Smoky, Charred Crust)

  1. Preheat BBQ to high heat.
  2. Season steak well and sear for 3-4 minutes per side.
  3. Move to indirect heat and cook for another 5-10 minutes, depending on doneness.
  4. Rest before slicing.

  1. Heat a cast-iron pan over high heat with a drizzle of oil.
  2. Sear steak for 3-4 minutes per side, adding butter, garlic, and rosemary for extra flavor.
  3. Rest before serving.
