Cooking Instructions:
🔥 Oven-Roasted (For a Perfect Medium-Rare Rack)
- Preheat oven to 200°C (390°F).
- Season lamb generously with salt, pepper, garlic, and fresh rosemary.
- Heat a pan over high heat and sear the rack for 2-3 minutes per side until golden.
- Transfer to a baking tray and roast for 15-20 minutes (internal temp 52-54°C (126-130°F) for medium-rare).
- Rest for 5-10 minutes before slicing into cutlets.
🔥 BBQ/Grill (For a Smoky Charred Finish)
- Preheat BBQ to medium-high heat.
- Sear lamb racks for 2-3 minutes per side, then move to indirect heat.
- Cook with the lid closed for 12-15 minutes until desired doneness.
- Rest before carving.
🔥 Pan-Seared Cutlets (For Quick Cooking)
- Slice the rack into individual cutlets.
- Heat a pan over medium-high heat with a drizzle of oil.
- Cook cutlets for 3-4 minutes per side until golden brown.
- Rest before serving.
