Cooking Instructions:

- Preheat oven to 230°C (450°F). Place the roast on a rack inside a roasting pan.

- Reduce heat to 160°C (320°F) and cook for an additional 50-60 minutes per kg, until the internal temp reaches 63°C (145°F).
- Rest for 10-15 minutes before slicing.

- Preheat BBQ or smoker to 160°C (320°F) using indirect heat.
- Cook for 2-3 hours, or until internal temp reaches 63°C (145°F).
- If needed, finish over direct high heat for 5 minutes to crisp up the skin.
- Rest before slicing.
