Our Yearling Brisket is a premium, well-marbled cut from young, grass-fed beef, known for its deep flavor and melt-in-your-mouth texture when slow-cooked. Whether braised, smoked, roasted, or slow-cooked, this brisket transforms into tender, juicy perfection, making it ideal for BBQ, pulled beef, or hearty braised dishes.
Cooking Instructions:
🔥 Slow-Roasted (For a Classic, Tender Finish)
Preheat oven to 150°C (300°F).
Season brisket generously with salt, pepper, garlic, and smoked paprika.
Sear in a hot pan for 3-4 minutes per side until browned.
Transfer to a roasting dish with beef stock, onions, and a splash of red wine.
Cover tightly with foil and roast for 3-4 hours, basting occasionally.
Rest for 15 minutes before slicing against the grain.
Rub brisket with BBQ seasoning or salt and pepper.
Smoke for 5-6 hours, spritzing with apple cider or broth every hour.
Wrap in butcher’s paper or foil and continue cooking until internal temp reaches 90-95°C (195-203°F).
Rest for 30 minutes before slicing.
🔥 Slow Cooker (For an Easy, Hands-Off Method)
Sear brisket in a pan for 3-4 minutes per side.
Place in slow cooker with stock, Worcestershire sauce, and herbs.
Cook on low for 8-10 hours or high for 5-6 hours until fork-tender.
