Cooking Instructions:
🔥 Oven-Roasted (For a Tender, Juicy Finish)
- Preheat oven to 200°C (390°F).
- Season the roast generously with salt, pepper, garlic, and fresh herbs.
- Sear in a hot pan for 2-3 minutes per side until browned.
- Transfer to a roasting pan and cook for:
- 50-52°C (122-126°F) for rare
- 54-56°C (130-133°F) for medium-rare
- 58-60°C (136-140°F) for medium
- Estimate 25-30 minutes per kg.
- Rest for 15 minutes before slicing.
